Food business operators falling under a category and scale designated by the central competent authority in a public announcement shall employ a certain percentage of professionals with vocational or technical certification in food, nutrition, catering, or related fields, who are responsible for food sanitation and safety management.The regulations governing the employment, duties, execution of responsibilities, and management of professionals with vocational or technical certification mentioned in the preceding paragraph shall be prescribed by the central competent authority.

經中央主管機關公告類別及規模之食品業者，應置一定比率，並領有專門職業或技術證照之食品、營養、餐飲等專業人員，辦理食品衛生安全管理事項。
前項應聘用專門職業或技術證照人員之設置、職責、業務之執行及管理辦法，由中央主管機關定之。
